Expert Sharpening Guide for Higonokami: From Scandi Grind to Razor Sharp

A Nagao Higonokami is a hand-forged tool. Using a pull-through electric sharpener will ruin its soul (and its temper). To honor the craftsmanship of the Nagao Kanekoma Factory, you must use Japanese Waterstones. This process not only sharpens the blade but also strengthens your bond with the tool.

For a professional edge, we recommend a three-stage approach:

• Medium Grit (#800 - #1000): Your workhorse stone for removing dull steel and setting a new edge.
• Fine Grit (#3000 - #6000): For refining the edge and removing scratches left by the medium stone.
• Extra Fine/Polishing (#8000+): Optional, for those who want a true mirror finish.

The Higonokami offers unique flexibility in how you grind it:

• The Micro-Bevel (The Safe Choice): Sharpen at a 15–20 degree angle. This creates a durable edge that stays sharp longer for general utility tasks.
• The Zero-Grind / Scandi-Grind (The Expert Choice): Lay the wide primary bevel completely flat on the stone. This makes the knife an incredible slicer and wood-shaving tool, though the edge is more delicate.

1. Soak: Submerge your stones in water until the bubbles stop.
2. Establish the Slurry: Rub the blade back and forth to create a "mud" on the stone—this is the secret to a smooth Japanese finish.
3. Find the Angle: Place two coins under the spine of the knife to find a consistent 15-degree angle.
4. Create the Burr: Sharpen one side until you feel a slight wire edge (burr) on the opposite side.
5. Flip and Repeat: Repeat the process on the other side.
6. The Final Polish: Move to the fine-grit stone and use light, sweeping strokes to remove the burr.

For a "scary sharp" edge, finish with a leather strop loaded with green honing compound. A few stroking motions away from the edge will align the microscopic steel teeth, allowing the knife to hair-shave with ease.
